2004 Cabernet Sauvignon Estate Grown 98% Cabernet Sauvignon, 4% Cabernet Franc, 4% Merlot, 1% Malbec, 1% Petite Sirah 437 Cases produced The Cabernet Sauvignon fruit was harvested by hand on September 6 and 21, 2004 at an average brix of 24.9. The fruit was placed in small open top, punch down fermenters with skin contact lasting an average of 21 days. The wine was aged in 100% French oak barrels (40% new oak) with medium taos for 18 months. The wine was bottled on April 29, 2006. It is unfined and unfiltered.
